Recipe of the week: Tibetan beetroot and radish salad

Ingredients
For the dressing

1tsp minced garlic
1 tbsp lemon juice
1 tsp mustard oil
1 tsp grated ginger
Salt to taste
For the salad
1/2 cup sliced beetroot
1/2 cup sliced radish
1/ 2 cup sliced cucumber
1/2 cup finely chopped spinach
1/4 cup finely chopped spring onion
Preparation
In a small bowl, whisk the dressing ingredients till smooth and season with salt to taste .
To make the salad - in a large bowl , combine the Beetroot , radish , cucumber , spinach and spring onion .
Pour the dressing and gently toss to coat .
Serve immediately .
