2-3 tbsp ghee
1 /2 inch cinnamon stick
1 tbsp brown sugar
4 cups water
1 tsp salt
2 cups Basmati rice, soaked in water for 1 hour, drained
2 medium-size onions, thinly sliced
In a pan over low heat, heat 1 tbsp of ghee.
Add the cinnamon stick and sugar. Cook, stirring, until the sugar caramelises.
Add the water and bring to a roaring boil.
Season with salt and mix well.
Add the rice. Cover the pan and cook on low heat for 10 minutes, or until the rice is done and the water is absorbed. Remove from the heat.
In another small pan over medium heat, heat the remaining 2 tbsp ghee.
Add the onions and fry until golden brown
Remove and drain on a kitchen paper towel for excess oil to drain.
Serve the rice hot, garnished with the fried onions.
