Recipe of the week: Homemade garlic pickle

Ingredients
½ cup mustard oil
1 tbsp mustard seeds
1 tbsp fenugreek seeds
1tbsp nigella seeds
2 cup garlic cloves, peeled
1½ cups lemon juice
½ cup red chilli powder
¼ cup fennel powder
Pinch of asafoetida
5 Tbsp ground cumin
½ cup salt

Preparation
In a skillet over low heat, heat the oil.
Add the mustard seeds ,fenugreek and nigella seeds.
Cook until the seeds begin to crackle.
Add the garlic. Sauté for a few seconds.
Stir in the lemon juice, red chilli powder,fennel powder, asafoetida and cumin . Mix well. Cook for just 5 minutes.
Add the salt. Mix. Remove from the heat and set aside to cool.
Store in an airtight container.
