Recipe of the week: Coconut Cutlet

1 cup grated fresh coconut
1 tbsp rice flour
1 tbsp all-purpose flour
1 tsp red chilli paste
Oil for deep frying
Salt, to taste
Add the coconut, rice flour, all-purpose flour and red chilli paste.
Season to taste with salt and stir the mixture well to combine.
Roll the mixture into 8 flat cutlets.
In a wok heat oil ,carefully add the cutlets and deep-fry until crispy. Transfer to paper towels to drain.
Serve hot .
