For those who have always enjoyed eating the sweet and ripe papaya, here’s a chance to taste the flavours of the unripe version made in different ways.
Green Papaya Salad
Blend 2 teaspoon chopped garlic, a handful of dried red chillies soaked and chopped and 1 tablespoon of sugar into a coarse paste. Add 2 tablespoon of soy sauce and juice of one lemon to it. Take green papaya and grate it well, around 2-3 cups. Cut green beans into strips. Add the paste to the grated papaya and beans and keep it in the fridge for a while. Garnish with chopped peanuts, chopped tomatoes and shreds of cabbage leaves.
Stuffed Green Papaya
Wash and peel one green papaya and take out the seeds. In a separate bowl take 2 chopped onions and 1/2 cup breadcrumbs. To this add 500g of minced beef along with 1 beaten egg, and 2 tablespoons of milk. Add salt and pepper. Mix well and stuff this inside the papaya. Smear the sides of the papaya with oil and bake in 200C degree oven. Sprinkle salt and pepper on top and cover with foil. After half an hour remove the foil and bake again till it turns brown. Serve hot.
Green Papaya Pickle
Take 1 cup green papaya, 1 green pepper, and 1 carrot and slice all of them in strips. Blanch them together for almost 10 minutes and then drain the water. In a separate bowl take 2 cups of vinegar, 1 cup of sugar, 3 tablespoon of salt, and 1 sliced ginger. Boil these together and once it gets medium consistency pour it over the vegetables and cool.
Stir Fry Green Papaya
Take 4 cup of green papaya and cut into thin strips. Also take ginger and cut into strips. Take 2 tablespoons of coconut oil in a pan and add 1/2 grated ginger and 10 red chillies. Fry well and then add the strips of green papaya. Add the seasonings of salt and pepper. Once done which takes around 5 minutes serve hot with rice or any other main course dish.
Green Papaya Soup
Cut 1 medium size green papaya into small strips. Take 5 cups of chicken stock and a handful of spring onions, cut into small pieces. Also take one ginger and cut into strips. In a deep pan boil the chicken stock and once it starts boiling add papaya, and the strip-cut ginger and boil for about 5 minutes. Sprinkle the spring onion on top and mix well. Add the seasonings and serve hot.
