Mandarin beef
Take 1 kilo beef and sauté with 1 chopped onion in a saucepan. Add 1 cup water, 1/2 cup soy sauce, 1 teaspoon grated ginger, 1 tablespoon sugar and 3/4 cup of orange juice. Boil it once and then cook in simmer for 1 1/2 hours. Add 1/2 cup celery, a cup of frozen mix vegetables of carrots, beans, and corn and let it simmer five minutes. Mix 2 tablespoons of cornstarch with 1/4 cup cold water and add to mixture to thicken. Add 5-6 chunks of mandarin oranges and cook for a while. Serve with rice.
Mandarin fluff
Take 16 ounces cottage cheese, 2 3-ounce boxes orange Jell-o mix, 16 ounces frozen whipped topping and 2 cans of mandarin roughly chopped. Blend cottage cheese until smooth and in a bowl and whisk in the dry Jell-o mix. Fold in mandarin oranges and refrigerate for 2-3 hours. Serve with whipped topping and fresh orange slices.
Mandarin salad
In a thick pan cook 1/2 cup sliced almonds and 3 tablespoons of sugar over medium heat. Stir well till the sugar dissolves and gets coated. Once cool, store in airtight container. In a separate bowl take shredded lettuce and mix with 1 cup chopped celery and 1 chopped onion and add some dash of Tabasco sauce. Season with salt and pepper. Toss the sugar coated almonds and 1 cup of chopped mandarins.
Mandarin chicken
Mix together 1/2 cup flour, 1 teaspoon salt and 1/4 teaspoon black pepper. Put this in a bag with chopped chicken until all pieces are coated well. Place the chicken in a shallow baking dish. Pour over it juice of mandarin, 1/2 cup soy sauce, 1/4 cup sugar, and 1/2 teaspoon mace. Bake at 200 degrees C for 40 minutes and once done arrange orange slices over chicken. Bake for 20 more minutes. Serve with rice.
Mandarin muffins
Sift 1 1/2 cups sifted flour, 1/2 cup sugar, 2 teaspoons baking powder, 1/2 teaspoon salt, 1/2 teaspoon nutmeg, and 1/4 teaspoon allspice. In a separate bowl combine 1/4 cup butter, 1/2 cup milk, and 1 beaten egg, and add this mixture to the flour. In this also add 1 can of mandarin oranges and mix lightly. Pour the batter into lined muffin tins and bake at 250 degrees C for 15 to 20 minutes. Remove from oven and roll in some cinnamon-sugar mixture.
