Know your Spice: Chaat Masala
What’s It?
Chaat Masala is a blend of Indian spices. It is a tangy condiment that adds flavour to various dishes. This seasoning is very commonly used in India and is called an all-purpose seasoning.
History
Chaat masala originated in some parts of Uttar Pradesh in India, but they are now eaten all across the Indian Sub-continent.
Cooking with It
It is used in salads, legumes, fruit, grilled fish and meats, potatoes and other vegetables. It can be used either before or after cooking. While most people use pre-mixed chaat masalas bought from stores, it can be made at home too. (See recipe below)
Select and Store
Store it in an airtight jar in a cool and dry place away from moisture. It will keep well for months, even a year. [email protected]
Homemade Chaat Masala
Ingredients
2 tablespoons cumin seeds
1 1/2 teaspoons fennel seeds
1 teaspoon mint
1 tablespoon amchur (mango powder)
1 tablespoon black salt
1 teaspoon cayenne pepper
1/4 teaspoon ground ginger
Preparation
Toast and grind cumin and fennel seeds and combine with remaining ingredients. This mixture can be refrigerated and stored in a jar with a tight fitting lid.
