BANANA FRITTERS
Ingredients
3 ripe bananas
1 tsp vanilla extract
½ tsp cinnamon
3 tbsp brown powdered sugar
1 cup all purpose flour
Oil for frying
Preparation
Mash bananas with fork in bowl.
Add powdered brown sugar, vanilla extract and cinnamon.Sift in flour and stir with spoon until fully combined.
Add oil to a wok over medium-high heat. Once oil is hot, drop banana fritter batter in oil with the help of a tablespoon.
Deep fry till golden brown on both sides.
Remove fritters and drain on the kitchen towel.
Serve hot.
OMELETTE IN A MUG
Ingredients
2 to 3 eggs
1 tbsp shredded cheese
1 tbsp finely chopped bell pepper
Olive oil to grease
Salt and pepper to taste
Preparation
Grease the mug with olive oil.
Add eggs to mug and whisk together with a fork.
Add bell peppers, cheese, salt and pepper. Whisk till all ingredients are completely mixed together.
Microwave on high for one minute. Stir.
Cook for another 45 to 60 seconds or until eggs are set.
Top with a bit more cheese, salt and pepper.
Serve hot.
CROUTONS CHAAT
Ingredients
Toasted 6 bread slices (cut in 1inch cubes) or store bought croutons
1/4 cup pomegranate pearls
1/2 cup yoghurt (whisked)
Tamarind chutney - as needed
Green mint chutney - as needed
1/2 tsp roasted cumin powder
1/4 tsp red chilli powder
1/2 tsp chaat masala
Boiled potato- 1 (cubed)
4 tbsp onion (finely chopped)
2 tbsp tomato (chopped)
1 tbsp coriander leaves (finely chopped)
Sev for garnishing
Preparation
The bread pieces should be crispy for the chaat. Toast the bread before making the chaat. Or use store bought croutons.
Arrange the toasted bread or croutons in a serving dish.
Top it with some boiled potato cubes, chopped onions, tomatoes and coriander leaves.
Drizzle tamarind chutney and green mint chutney.
Pour the whisked yoghurt over and add the pomegranate pearls.
Sprinkle some red chilli powder, cumin powder and chaat masala over the yogurt.
Finally garnish with sev on top and serve immediately.
CARROT AND CELERY SANDWICHES
Ingredients
1/2 cup carrot (Grated)
1/2 cup celery (Chopped)
4 slices bread
4 tbsp cream cheese spread
Salt to taste
Preparation
Take a mixing bowl, and add the above ingredients except bread.
Mix well.
Apply this spread to the top of 1 bread slice and cover with another bread slice to make a sandwich.
Carrot celery sandwiches are ready!
